Shrimp Pesto Pizza

wpid-imag1718.jpgLooking for an easy yet absolutely delightful dish to make for dinner tonight?  Then you will love this recipe for a shrimp pesto pizza.  I had my first shrimp pest pizza when I visited San Francisco.  Soon after arriving home I decided to try making my own.  I purchased ingredients by memory of the one I had tried and bought my dough from Fresh and Easy.  My pizza was a hit!  In fact we agree that it was better than the one we had in SF.

Ingredients:

Pizza dough.  I like to use Fresh and Easy’s Rosemary dough.

Pesto sauce.

Shrimp.

Garlic.

Mozzarella cheese.

Parmesan cheese.

Red onion.

Tomato.

and any other toppings you fancy.

How much of each ingredient is up to you.

Directions:

Preheat oven according to the instructions of your dough.  Boil the shrimp if you are not using pre-cooked.  Roll out your dough and place on your pizza stone or baking sheet.  Spread the pesto on the crust and then top with mozzarella.  Arrange shrimp, onion and tomato slices.  Top with freshly pressed garlic, parmesan, and a little more mozzarella.  Bake according to the directions of your dough.
